Carrot, Chives, and Cream Cheese Bread Rolls; Ham, Horseradish, and Kartoffelkäse [‘potato cheese’, a spread made from potatoes and sour cream] Bread Rolls, and Grapes
INGREDIENTS
Carrot, Chives, and Cream Cheese Spread Bread Rolls, makes 3 bread rolls
3 bread rolls, sliced open
1 amount of carrot, chives, and cream cheese spread, as prepared to the recipe
1 tomato, cut into thin slices
½ red pepper, cut into thin strips
6 salad leaves
Carrot, Chives, and Cream Cheese Spread, makes approx. 250 g
125 g cream cheese
100 g carrots, finely grated
3 tbsp chives, finely chopped
½ tsp lemon juice
Pepper
Ham, Horseradish, and Kartoffelkäse Bread Rolls, makes 4 bread rolls
4 bread rolls, sliced open
½ of the amount of Kartoffelkäse with horseradish, as prepared to the recipe (see below)
200 g cooked ham, cut into thin slices
¼ cucumber, cut into thin slices
8 salad leaves
Horseradish Kartoffelkäse, makes approx. 400 g
300 g floury potatoes
2 tbsp butter
100 g sour cream
½ onion, finely chopped
2 tbsp horseradish (from a jar)
Salt
PREPARATION
Carrot, Chives, and Cream Cheese Spread, makes approx. 250 g
Mix the cream cheese, carrots, chives, and lemon juice together with a fork until a smooth crème is formed, and season with pepper.
Ham, Horseradish, and Kartoffelkäse Bread Rolls, makes 4 bread rolls
Spread the bread roll with Kartoffelkäse. Layer ham, cucumber, and salad leaves on top and place the two halves of the roll together.
Horseradish Kartoffelkäse, makes approx. 400 g
Steam potatoes in their skins until soft, peel, strain through the potato ricer or grate finely. First mix the hot potatoes with the butter, and then the sour cream and horseradish, into a smooth spread. Mix in the onion. Season the horseradish Kartoffelkäse with salt to taste.
