Quick and Easy Tomato Soup, makes 4 portions
INGREDIENTS
1 kg ripe tomatoes, chopped into large wedges
1 onion, roughly chopped
4 cloves of garlic, whole
2 tbsp butter
2 tbsp olive oil
1 bay leaf
1 tsp oregano
1 tsp basil
1 tsp thyme
Salt
Pepper
½ bunch of basil, finely chopped
PREPARATION
Place tomatoes, onion, garlic, butter, olive oil, bay leaf, oregano, basil, thyme, and 100 ml water into a pot. Allow to simmer for around 20 minutes, stirring occasionally.
Strain the soup through the food mill, briefly re-heat, and season with salt and pepper to taste. Serve the tomato soup garnished with basil.
