INGREDIENTS
Beetroot Salad with an Orange Dressing, makes 4 portions
300 g beetroot
100 g yoghurt
Juice of 1 orange
Grated zest of ¼ organic orange
1 tbsp lemon juice
Nutmeg
Salt
Pepper
Carrot Salad with a Ginger and Lemon Dressing, makes 4 portions
400 g carrots
Juice of 1 ½ lemons
1 tsp honey
1 tsp fresh ginger, finely chopped
½ tsp coriander seeds, crushed
Salt
Chili
PREPARATION
Beetroot Salad with an Orange Dressing, makes 4 portions
Grate the beetroot using the Barrel Grater Super (large insert).
Mix together sour cream, orange juice, orange zest, and lemon juice.
Season the dressing with nutmeg, salt, and pepper to taste, mix into the beetroot.
Carrot Salad with a Ginger and Lemon Dressing, makes 4 portions
Grate the carrots using the Barrel Grater Super (small insert). Mix together lemon juice, honey, and ginger. Season the dressing with salt and chili to taste, mix into the carrots.
Finely-sliced, ripe mango goes well with the carrot salad, as well as with the beetroot salad.
