Minestrone
INGREDIENTS
For 4 portions
1 onion
2 garlic cloves
1 potato
100 g carrots
100 g yellow turnips
100 g green beans (can be frozen)
100 g leek
100 g celery,
4 peeled tomatoes (canned)
1 small can of kidney beans
125 ml vegetable stock
1 teaspoon oregano
1 teaspoon thyme
Salt, pepper
PREPARATION
- Peel the onion and garlic and chop them up finely.
- Rinse the vegetables. Dice the potatoes. Thinly slice the
carrots and yellow turnips. Thinly slice the celery.
Chop the green beans into small pieces.
Cut the leek into thin rings. Dice the tomatoes - Put the beans in a sieve, rinse with cold water and allow the liquid to drain.
- Heat 1 tablespoon of olive oil in the Kelomat. Add the onion and garlic and let them steam
over medium heat. - Add the vegetable stock and season with oregano and thyme.
- Close the Kelomat, heat it and let the minestrone cook for 5 minutes under pressure.
- Let the Kelomat cool down, open the lid.
- Add the drained canned kidney beans and let the minestrone cook for another 1-2
minutes without the lid in order to heat the kidney beans. - Season the minestrone with salt and pepper.
To make the minestrone a main dish:
add freshly ground parmesan and crispy baguette
to the minestrone.
